Whitefish Food & Wine // PEAK PALATE: 7-course Pairing Dinner at the Hellroaring Saloon

Experience PEAK PALATE: Where the Mountains Meet the Vine - an extraordinary 7-course Alpine-inspired culinary adventure at the historic Hellroaring Saloon on Big Mountain, paired with 7 different and exquisite 90+ rated wines, produced from Chilean and Argentinian grapes grown exclusively at high altitudes.  Wine selections curated by importer Geo Vino, from artisanal producers Mayu, Casa Silva, Amayna, J Bouchon, Mendel and Luca.

• Ticket purchase guarantees one seat per ticketholder, and covers food, wine pairings and gratuity. Additional beverages may be available on a cash-bar basis.
• Cocktail hour 6pm - 6:45pm.  Dinner seating PROMPTLY at 6:45pm.
  • Late arrivals assume all risk for missing food-and-wine course presentations, and will not be compensated for any missed courses/pairings
• Each on-time attendee shall enjoy a 7-course fixed menu prepared by the Chef, with 7 wine pairings:
  • 1 Bay Scallop Ceviche, Shallot, Ginger, Orange Tobiko, paired with Amayna Sav Blanc
  • 2 Wild Mushroom Tart with Goat Cheese, paired with J Bouchon Pais Salvaje
  • 3 Celery Root Ravioli, Crispy Pork Belly, Pomodoro, paired with Mendel Malbec
  • 4 Cured Snapper, Preserved Lemon Creme Fraiche, Watercress, Dill Oil, paired with Luca Chardonnay 
  • 5 Braised Leg of Lamb en croute, Bruleed Figs, Mint Duck Demi, paired with Casa Silva Los Lingus Carmenere
  • 6 Asparagus 3 Ways: Ribbons in a Mayu PX Vinaigrette; Grilled and Pickled with Cherry Peppers and Honey Cured Egg Yolk, paired with Mayu Pedro Ximenz 
  • 7 Marscapone Cake, Lemon Curd, Berries, pairing TBA
• Chef and Sommelier reserve the right to subsitute any dish or wine pairing with an equal or greater value course/pairing in case of emergency; best efforts will be made to communicate any menu changes in advance
